Muhu hapurokk is a traditional Estonian dish from Muhu Island, historically made by mixing ash-roasted, mashed potatoes with fermented milk (buttermilk). A modern refined version, famously served at Pädaste Manor, includes acidulated birch sap, cream, and egg yolk to create a light, mousse-like texture often paired with sweetened meringues.
